Wine & Dine at Bayberry's Orin Wine Swift Dinner

Bayberry, the latest concept from Lessing’s Hospitality Group, is nestled in the heart of Islip on Main Street. This American bistro is a family legacy out of a shared passion for high-quality dining and hospitality. Helmed by Executive Chef William Muzio, the restaurant pays homage to Islip’s maritime history with a vibrant menu focusing on local catches and innovative creations, all within an elevated dining experience that blends bistro classics and imaginative cocktails. On March 7th at 6 p.m., Bayberry is hosting their first wine pairing dinner with award-winning California winery Orin Swift and this is one dining experience you won’t want to miss.

The Orin Swift Wine Dinner will feature a special five-course tasting menu and each course will be paired with an Orin Swift wine. The evening will begin with cocktail hour and guests will enjoy an assortment of chef’s passed hors d’oeuvres while they sip on Orin Swift ‘Blank Stare,’ 2022 Sauvignon Blanc, featuring aromas of key lime, granny smith apple, hints of grapefruit, bright lemon-lime and a touch of grapefruit and guava. Both crisp and refreshing! The first course will feature diver scallops with a parsnip-white chocolate purée, yuzu brown butter emulsion, paired with Orin Swift’s Mannequin, a 2021 Chardonnay, with beguiling aromas of ripe golden apple, jasmine, citrus notes and a touch of cream.

The second course of the evening will highlight Montauk lobster agnolotti served with foie gras “snow,” and black truffle-lobster velouté, paired with the Orin Swift Slander, a 2022 Pinot Noir. This wine opens with bright strawberry, candied cherry, white pepper and violet aromas, with some black berry and touch of minerality, vibrant and energetic! Enjoy honey roasted Maple Leaf Farms duck breast, fig mostarda, apple & celeriac purée, candied kumquat, and five-spice jus for the third course which can be tasted with the Orin Swift Machete, a 2021 Petit Syrah Blend.

The savory dishes will conclude with a slow roasted ribeye served with a crispy potato pave, asparagus, and cremini mushrooms, paired with the Orin Swift 2021 Bordeaux Blend, Papillon. This wine is bright with considerable weight, showcasing rich flavors of cassis, blackberry and baking spices. Lastly, the night will end a sweet note with the fifth course featuring “chocolate” Valrhona chocolate cake topped with Amagansett Sea salt, persimmon jam, and Chantilly. This sweet course will be enjoyed with Orin Swift’s 8 Years in The Dessert, a 2022 Red Zinfandel and Syrah Blend, liquid velvet on the palate!
